Today I'm sharing with you all an easy lunch of dinner idea you can make in 30 minutes, with household staple ingredients. This vegan bulgogi bowl is loaded with nutrients to keep you fueled along with being an explosion of flavors.


The entire dish comes together perfectly and is also great for meal preps as well. The entire dish is also super customizable, so feel free to add any additional veggies or sauces to craft this meal exactly to your liking.

And the thing which really elevates this dish to next level are kimchi pickles. Today for this recipe I've partnered up with my favorite kimchi brand, Cleveland Kitchen and added an extra kick of flavor to this meal using Cleveland Kitchen kimchi pickles

Kimchi Pickles

I personally love adding kimchi to any dish as it adds most scrumptious flavor and crunchy element to any meal. And one of my go to brands for years now has been Cleveland Kitchen. They craft a wide range of fermented veggie sides and their kimchi are my personal favorite. I recently tried out the newest kimchi pickles, and have become quickly obsessed. The pickles have the perfect crisp texture and taste extremely fresh with the just the right balance of tang and spice. These pickles are also lightly fermented which support gut health as well, which I'm a huge fan of. Today I topped my bulgogi bowls with a couple of kimchi pickles, but besides this dish, these pickles are spectacular to add to any dish.

Ancient Grain Blend

Fresh Spinach

Plant Based Vegan Bulgogi

Kimchi Pickles



  1. Prepare the ancient grains: add grains to a pot of water on medium high heat. Cook until grains have become fluffy and fully cooked through. Making sure to stir the pot occassionally

  2. Grilled plant based beef bulgogi on a pan with avocado oil. Cook bulgogi evenly on each side until tender and fully cooked through. The bulgogi should be tender & soft in the center with the exterior slightly crisp.

  3. Assemble the dish by adding spinach, avocado, cumcumer, ancient grains, bulgogi to a bowl. Drizzle on your miso ginger dressing. And add a few kimchi pickles
